Many reptiles have the 'third eyelid' or nicatating membrane that protects the eyes from water, dust, etc. Most turtles have this- you rarely see it move apart from the other eyelid, however.

Turtle- catch term for all shelled reptiles, and used specifically for aquatic turtles and sea turtles.

Terrapin- this is the tricky one. In the US, it is a species of trutle (Diamondback Terrapin) and a slang term for edible turtles. In Europe, it is used for the basking turtles like sliders and Painted Turtles.

Tortoise- the true tortoises are identified by elephant-like legs with no real toes, but the term is also used in some places for land turtles that are not tortoises, and in Australia as the term for some water turtles.

A Snapping Turtle might be called a terrapin by somone using Southern US slang for edible turtles, but it is a very aquatic species so everyone else would call it a turtle.

They catch their food underwater so they CAN bite. However, they are much less agressive in the water than they are on land. There is probably one in every pond or lake within their range and you don't often hear of anyone being bitten while swimming, do you? Swim. Enjoy! EDIT: To Chris. Stepping on a snapper won't get you bitten. There is a collecting technique called "noodling". You wade thru the mud barefoot and feel for the snappers. Then you reach down and grab the tail. It helps if you know which end is which. And, before you ask, I have done it.
