olive oil

or linseed oil ??

I would use linseed oil.

if it is just an oil to help protect the surface a bit and bring out the grain i personally would use Danish oil or teak oil these are the two oils i use on solid wood work surfaces after i have installed them you can get theme from most good diy stores

Oil doesn't repair wood. It depends on the type of protection you want.Also finished color is a concern. I've had good luck with Tung oil. Check it out. Go to a large home improvement store or woodshop and compare finishes, color, price, ease of application,etc....

My choice would be boiled linseed oil.
