Each ity had it's "patron". In the case of Troy it was Apollo.
On the side of the Greeks it was Poseidon and Athena

The Greeks won by deceit- they built a huge wooden horse and pretended to leave. The Horse was supposedly a gift to Poseidon to secure a safe journey home. The Troians took the horse to the temple of Apollo (inside the city) to negate the effect of the gift. However the Greeks had soldiers hidden inside the horse and at night they came out and opened the gates, letting in the Greeks.
Ulysses was the behind the idea and he is the symbol of cleverness and deceit

Paris is the symbol of a cheat and a coward- because he stole the wife (Helen) of his host (Menelaos of Sparta) - hence the cheat, because he thus broke the laws of hospitality.

The Greeks also considered him a coward because he was an archer and fought from a distance as opposed to the heavily armed and armoured infantry- which was the preferred way of combat for "real" Greeks (eg Achilles)

the dieties figure hugely, according to tradition. some say the war really started because a mortal married a diety; that is, peleus, the king of phthia and father of achilles, married thetis, the daughter of the old man of the sea, and that this was a gross violation of cosmic law. at their wedding, all the gods were invited save discord. in spite, she came anyway, and threw a golden apple in the midst of the crowd upon which was inscribed the words, "for the fairest." hera, sister and wife of king zeus, athena, the goddess of wisdom and patron of athens and daughter of zeus, and aphrodite, the foam born goddess of love, all claimed the prize as their own and demanded that zeus decide. zeus deferred the matter to the judgement of a mortal prince of troy, paris, the son of king priam and queen hecuba. hera offered unlimited power if paris chose her, athena offered unlimited wisdom, but aphrodite offered the most beautiful woman in the world and so paris chose her as the recipiant of the golden apple proclaiming her the fairest. the problem was, the most beautiful woman in the world was already married. but aphrodite helped paris steal helen from menelaus, the king of sparta and this started the war, which was to last ten years.

during the war, the gods interfered often in battle. ares, the god of war was driven from the field by diomedes, the greek king of argos, so great was his war fury that even ares could not stand up to him. and at the beginning of the iliad, once agamemnon had insulted achilles and the greatest warrior of the greeks withdrew from the fighting, achilles prayed to his mother thetis to go and convince zeus to favor the trojans in battle now that the greeks had dishonored the greatest among them. and favor the trojans, zeus reluctantly did, until the greek ships were almost set ablaze by hector's war fury.

of course it was the trick of the wooden horse that finally won the greeks access to the city of troy so they could sack it. they achieved their objective by means of a strategem, rather than just by hard fighting. there is nothing deceitful about this. it saved greek lives. and all a general is obliged to do is save his own men first.

as for what paris symbolizes. he can be seen as an adulterer, a lecher, a dupe in the hands of forces beyond his power to resist. but i think the greeks would also look at him as a plaything in the hands of powerful gods. it was his fate to love the most beautiful woman in the world, regardless of the outcome. so in a strange way, in view of this notion, paris could symbolize piety; that is, obedience to the gods even when it calls for your own destruction and all that you love along with it.
