is it possible someone hand you a paper and you sign it , for example it's a consent form for certain activity or acknowledgement , but you're busy and sign it without really reading the whole crap , could you be scammed into selling you house etc this way ?

Of course yes. Signing an "agreement" has contractual power.

Yes, it is entirely possible. When you affix your signature to anything, you are expected to know and read what you are signing. "I didn't read it before I signed it." won't hold up in a court of law.
