From the top:
The core professions are in each of the games, they are:
-Warrior: A tank, more about taking damage than giving it.
-Ranger: Ranged physical damage, with pets and summons. Their attacks can do good damage, but are usually very slow.
-Monk: Healers and buffers primarily, but also good undead killers. Don't expect to kill much solo.
-Elementals: The best class for area effect damage. They are really fragile though.
-Necromancer: Can summon pets, debuff and loves cold damage. Many of their techniques require a sacrifice of your own health.
-Mesmer: A counter class. They have many debuffs and interrupt skills, but are hard to play.
In Factions there are two more professions: (I don't own Factions, so these are second hand accounts.):
-Assassin: I've heard these guys being called a glass cannon, very fragile, but capable of extreme damage.
-Spiritualist: A party buffer, basically specializing in the ranger's summons.
Nightfall also has two exclusive professions: (I do own Factions and have played these professions.):
-Paragon: Take the monk's buffs and add them to the warrior and you have the Paragon. Many party wide buffs, with the best armor around, but not a lot of direct attack.
-Dervish: Crowd control. The dervish is a melee warrior capable of hitting more than one target at a time and enhancing themselves through a LARGE list of enchantments. More fragile than a warrior though and their enchantments are all self-only.
Guild Wars does not have a monthly fee. You do have to buy an access key for the game you want to play however. (If bought from a store, the key is in the box. Don't lose it!)
The best profession depends on your play-style. The professions are fairly balanced to do one or two things really well, at the cost of something else. In fact, you can even change the way a class plays by the way you arrange their attribute points. A fire elementalist is very different than an air one; a hammer warrior is different than a sword wielder.
Fortunately you can change attribute points and skills whenever you are in a town, so you can play a sword warrior one moment, and then change to an ax warrior in the next town.
You can have at least 4 characters per account without deleting anyone, so I recommend experimentation.
Every character in Guild Wars can have two professions at the same time. That gives them access to the second profession’s skills and their non-excusive attributes. You wear your primary profession’s armor at all times. Most people recommend avoiding spreading your attributes and skills out to far however.

Original game had:
Warrior - Tank with fairly good single-target DPS. Limited spiking capability, so they don't win fights quickly; they wear down the opponent.
Ranger - Archer with options for a pet and summoning nature spirits. Pretty much a Jack of all Trades, Master of None.
Elementalist - Your basic offensive mage, with limited defensive capabilities.
Necromancer - Can raise small armies of undead, or attack directly with spells focused on cold, blood, and disease. Many of their abilities either steal health or sacrifice their own health.
Mesmer - The masters of control, they are about either controlling Energy (aka MP) or interrupting an opponent's actions.
Monk - While they have some offensive magics, they are primarily healing and protection
These are called the "Core Classes", and are included in all games.
Factions additionally grants you access to:
Assassin - The definition of spiker, they are built around chaining attacks. one missed attack will prevent you from getting to the big move at the end, but a full combo is vicious.
Ritualist - A character that is basically a blend of Monk healing, Ranger Spirits, and Elementalist's Lightning abilities
And Nightfall lets you use:
Dervish
Paragon
(I don't know much about the Nightfall characters.)
You don't have to pay to play, but you will need to buy each expansion as they come out to remain competative for PvP. If you don't care about being the best PvPer around, then you can safely buy only one or two.
You get two professions for each character. However, some limitations are placed on how strong your secondary class can be, so it ususally is only used for 1 or 2 abilities to fill out a character build. That probably sounds like a lot of wasted effort, but when you only bring 8 skills with you into battle, 1-2 is a lot for a secondary job.
As for best professions, Guild Wars is designed around balance. Most 8 character teams will want 2 characters concentrating on defense/healing, so Monks and Ritualists are always in demand. In PvE, Warriors are popular because of their strong armor and the AI's inability to recognize that beating on the tank isn't the best idea. One could argue that Mesmers are the strongest, since they can completely shut down the abilities of an opponent, but they are also the toughest to play, so few are actually good with them, and a bad Mesmer is by far the most useless character.
Picking a class combo is more about deciding what job you want to fill on the team and then identifying what classes fit that job. Do you want to be the guy who gets beat on a lot and just takes it, while beating back? That's a Warrior. DO you want to pick a mage on the other team and prevent them from getting off their most key spells? That's a Mesmer (or to a lesser degree Ranger). Do you want to rain fire on entire areas of the map? That's Elementalist. Do you want to do massive amounts of damage in short bursts to practically solo-kill enemies? Assassin, Ranger, or Lightning Elementalist.
