Will it show up as "expungment"? After it is taken off the record, do I still have to write it down on an application if it asks about any conviction in the past?

Once a conviction is expunged, it won't show up at all except for specific types of inquiries by law enforcement.

You also don't have to disclose an expunged conviction except, again, for certain things like applying for a job or license that requires the disclosure of expunged convictions. (Applying to be a cop is a common example)
