What is it that thing called where you go to a psychologist or someone in that field and they show you what seems like ink blotches/patterns on paper?

It's called a Rorschach test

Bristol board is a good all-purpose paper for ink work, and a pack of 20 will cost you in the 7-30 dollar range, depending on size. If you want to go really fancy you could spring for cold or hot pressed illustration board, but it's very expensive.
