The answer they are looking for is this:

Establish a friendly and positive relationship with the customer WHEN THEY FIRST SIT DOWN. Be honest with them about any troubles the kitchen is having UP FRONT. Encourage them to order what they want and ensure them AHEAD OF TIME that you will do your best to get their order through in a timely fashion.

It's always about proactive management.... They ask the question in a way that forces you into a reactive answer, but the truth is: if you are a good waiter, you've already dealt with the situation before it happened.

Apologize to them for the delay in service, grit your teeth and keep apologizing while they have their say. "Yes sir, I understand, I'm very sorry and I'll do my best to have your order out as quickly as possible".

Ask if they have an appointment somewhere, this will let you know if they're just hungry and cranky or worried about missing the show they're going to, etc. If they have somewhere they need to be, as they order, you can toss in "That's a great dish but it will take 30 minutes until I can get it to you and that might make you late, can I suggest something else you might enjoy?"

If it's an upscale restaurant, comp them an appetizer. Free food smooths over alot and you have more room to do that in an upscale place.

Keep the drink glasses full, maintain a professional compsure
and keep them up to date on the progress of their order.

Do NOT take the customers side!!!

Do nothing that might get you fired afterwards.

It depends on the power the management gives you as a server. I use to empower my employees so they would give you a drink or a appetizer. If it was really late we would comp the meal.

Along with your apology, you state that kitchen had run out of and a fresh batch was made up.
Or you offer them a free desert to compensate.
