If he has everything, you need to find something that he can do instead of have!
Have you thought of looking at lastminute.com? You can find some "unique experiences" on there such as a chocolate making workshop or abseiling.
You could also try to find something going on in your area like a wine tasting course or cookery classes.
There may be things you could try which are really boyish like a day at a race track (trying a Ferrari or a Formula 1 car).
These are quite easy to find as it's quite a popular gift.
Maybe you could make him an advent calender with vouchers in it like for you to give him a massage or he gets to choose a film to see. Choose things you can do for him that he'd like and he could use the vouchers whenever he pleases so it will be an ongoing treat!
Maybe he would like to try flying in a micro-light or glider or go horse-riding for the day?
Or perhaps there is an opera or a ballet or show you can get him tickets for? He can't have seen them all! You could combine this with a stay at a nice hotel for both of you.
