It's been a while since I've seen the movie, but I'd almost swear that Sipsy killed him. And, yes, they did barbecue him after the fact and even fed him to the detective.

remember that bum, and he came into the restaraunt looking for something to eat and he kept spilling his corn.
well, he hit ruth's husband with a shovel, and yes, the restaraunt took his body, and served it as meat. gross, huh?
