Most shops in Amsterdam close around 6, 5 on the Saturday, but they are open till 9 on the Thursday.

Much of the old center of town is Shopping area, the main streets are walking only.
Ask in your hotel how to get to the center of town, the main train station is at one end of the shopping area.
A good way to sight-see in Amsterdam is a canal tour, many companies leave from just in front of the Centraal Station.
If you behave sensible, like you would in any big town, you will be safe enough in Amsterdam.
I often go there, alone, and I am a woman too.
There is actually less drugs around than in most towns, it is just better regulated, and as such easier to see.

Just FYI - Joure is pretty far from Amsterdam, about 75miles or just under 1 1/2 hours drive so you may be taking day visits to Amsterdam unless you plan on booking a hotel in the city.
Amsterdam is a very safe - don't get the gossip about drugs make you think otherwise. I'm originally from the US and have been living here in Amsterdam for 15 years - I feel way safer here than in the US. There are VERY few serious crimes - most crime here is petty, such as pick pocketing. But if you are aware of your belongings and stay in lit areas, you are just fine. Really. No worries.
Stores in Amsterdam aren't usually open late, with the exception of Thursday evening - which is a shopping evening. Stores are usually open until 9pm on that evening. Otherwise, most places to shop close between 530-6pm. Some exceptions are the Bijenkorf - a large Amsterdam department store close to Central Station. This store is open til 7pm on a daily basis and til 9pm on Thursday/Friday. It's also open on Sundays - which is not common in the Netherlands.
With regard to sightseeing - there is a lot to see. A nice thing to do is to go on the canal tour. I know a lot of people think it's hokey but it is very nice to see the city from the view of a boat - gives a visitor a different perspective. There are a lot of different museums, the most common to visit are the Rijksmuseum, the Van Gogh Museum and the Stedelijk (modern art). Some people like to see the Anne Frank house but my opinion is that it is not worth it. A stroll in the Jordan - an old area in the center - is always fun as is an hour spent at the Waterlooplein flea market.
If you are feeling confident, you can even rent a bike and bike around town - it's practical, easy and lot of fun. Bikes have special paths and they are a very common mode of transport in A'dam. Otherwise, there is plenty of public transport (mostly trams) that connect the city and will get you just about anywhere.

Hamburg is N Europe`s shopping capital: try Alsterhaus department store, Neuer Wall, Goertz Shoes .... u will love it.
The Hamburg Marriott Hotel is located close to the shopping district; also try DIE BANK restaurant and bar. http://www.diebank-brasserie.de/ nice and sophisticated place.

Amsterdam if full of things to see if your not into drugs. such as the Rembrandt and vangough museums you can also take canal tours and go see the tulips fields if its the right time of year. its a beautiful place with a lot of history any hotel you stay in will have information about all the sights and things to do. In Hamburg take a boattrip in the harbours, Sankt Pauli, also interesting is the old Elbe tunnel, the Alster Lake and the new Museum. (I forgot the name). There is subway to all destinations. Ask the hotel reception.
