Louis is the traditional spelling. It's a French name (that's why you don't pronounce the "s"), and the other spellings are modified to fit with English pronunciation rules.
In my opinion, Louis is the best way to spell it. When you spell it any other way...some people will think that you just didn't know how to spell it the traditional way. I don't know if that possibility bothers you or not, but it's something to think about.

Louis is the correct spelling but i love to play around with the spellings to come up with unique spellings if you prefer Lewy then use it

Lewy is a nice sounding name, but Louie is the best spelling for this name, as Louis can be pronounced Lewis.
