i also live in Australia and there is really only one way to watch the games and that is with NHL centre ice online. you can access it from the bottom of the nhl.com page, however you have to pay a season rate of approx $170 aussie. the games are broadcast over the computer and they have an archive of past games though not always up to date. we have just gotten it and though it is not great it is definitely better than nothing. three guys signed up and split the cost and we each just watch our home team games (toronto, edmonton and vancouver) which works out well as they play in different time zones. it is supposed to be available to watch on plasma as well but we haven't tried.
no other way has been found unless you have someone at home to send the games.
espn shows the playoffs but that is it here

the other answers to this question have all tried to be helpful but in reality we have spent the last two years trying to find a viable way to watch the games here--the NHL should just give them for a nominal fee or free to cable channels in countries where they are trying to grow the game
the games on centre ice are broadcast as only 25% of your screen and not at a great clarity
and for all of LITY's great answers, i do not think that bettman is ever going to get here let alone think about us
here in sydney there are a few pubs that have a hockey night and show the best games of the last week--the games are sent over by friends and relatives from home so there must be a place like that in Melbourne as it has as many Canadians as here

there is a flaw in your question... you said you are a devils fan AND that you want to see them kick a$$.... what world are you living in?
all joking aside (ahh i'm a rangers fan) you can always listen to their broadcasts for free on nhl.com
and yahoo! does a live broadcast several times a week (but not just devils games). they pretty much follow the nhl on versus schedule... looks like next devils game that will be on is 12/5 game vs. boston

actually you're able to watch the devs kick ass anywhere now. can you say four game winning streak? nice to know we've got fans everywhere in Australia!
you can check you cable system to see if they have the NHL center ice package, if not, you can go online to NHL.com and order it there. it's expensive, around 160 dollars around here, but you can watch every single game and not just the devs, you can watch the rags get their asses kicked to =D

cbc.ca keeps the played games on their website. they'll have the Devils when they play on HNIC. It's not live though if that's what you want.
