Ok - I know diddly squat about cars, but I have a 1971 VW camper van that when you run the thing, even in cold weather, and then shut it down - it has to COMPLETELY cool down before it will start again - sometimes 20 minutes to 2 hrs. later. What is the problem?

What do you mean it overheats? This has to be one of the simplest motors ever made . As long as the belt is on the generator the fan attached to the other end cools the motor. If you are haveing trouble getting it to turn over once it has warmed up you may need to replace the starter. There are only 3 things to check, is the battery good? are all the connections to the battery and ground good? Is the starter good? Once in every 5000 it might be an ignition switch but iI really doubt it. 36 year old vw, thats not bad, I would replace the starter. Anything from a 1967-1979 beetle or van will work. check here for used parts in your area. http://car-part.com/

Since the VW is a air cooled motor you should be sure all your oil is up to the line on the dip stick. If the oil is low you will need to fill it back up to the line. If you have not had a oil change lately please have that done. Also they do run hot when they need a tune up this includes having the valves readjusted. If the valves are not adjusted properly this can also cause the motor to over heat.

Has the airflow been modified in any way that would hinder the flow of air across the motor?

Could be a water hose thats leaking water.
