I am doing a project for science fair, and we have set out the bread, but nothing has really happened. The bread has started to harden but thats it.

yes, eventually the preservatives will fail to prevent mold growth...that's why we have expiration dates

Put a little water in to keep the bread from drying out. In an arid climate like where I'm from the bread becomes dessicated before mold can grow.

Or, if it has been out in the air for a day or two just cover it to keep it from drying more. The mold spores have had enough time to get started.

Why would you choose a bread with added preservatives for your science project? When the bread becomes dry, it is harder for the mold to grow. It may be simpler to repeat your experiment with bread without added preservatives, than to explain why nothing grew.
