It really depends on how serious you are with your girlfriend and how you feel about her son and playing the male role model in his life! It's a compliment, it's a good thing. Be grateful that she thinks this and that the son feels comfortable around you. Most boys are very protective and defensive of mothers when it's a single mother.

When MY girlfriend tells ME that HER SON will love YOU more? First, I'd ask her who the hell YOU are. Second, I'd ask her why the hell she never told me about having a son.

I guess I'd interpret it as though your girlfriend thinks you're going to be around to see her kid grow up. She's hoping for permanence with you.
