The water goes to the leach field and is absorbed by the ground. The solids stay in the tank and slowly break down by the bacteria living in the tank.

Any oils and fats will float on the top and very very slowly break down. Since we tend to put solids into a septic system faster than it can break them down we need to get our tanks pumped out every so often.

It settles in the tank and the water part leaches into the field.
Make sure you have the tank pumped out every 2-3 years.
