I hope to obtain at least a master's in something biology-related, but I'm only average in math. Could I get away with taking only algebra+trig (one course), geometry, and statistics?

You should take at least one course in calculus. It would also be a good idea to take a statistics class -- but you can probably take one designed for non-math majors.

If you are still in HS -- you probably don't need the calculus course until you get to college. My university had one that was designed for biology majors.

Alg. 2, maybe even 3. Pre-cal, followed by Calculus. You might even want to look into AP statistics.
