Hi Shan-well, here's a new answer for you, but probably not a surprise since you know in what part of the U.S. I reside. We're making turkey enchiladas with both red and green chile sauce (Yes, that's how we spell "chili/chile" in my state. Yahoo disapproves). however, we are also making some stock. I'm sure we'll use it at Christmas and the freeloaders will have some turkey stock on their dog food tonight.

Friday it was turkey sandwich on a french roll with cranberry and lettuce and mayo.
Yesterday I made a bunch of macaroni salad with turkey, hard boiled eggs, olives, celery and mayo.
Tonight it's turkey with turkey gravy over rice with cranberry sauce.
Then it will be gone. I got a tupperware container from my son with slices of turkey to bring home. He knows I love turkey sandwiches the day after, almost more than than the turkey dinner itself.

No leftover turkey here. I do wish I had some though. My son cooked a fabulous turkey this year, but he took the leftovers home with him. Right now I'm munching on some chicken nuggets.

Oh yeah Shan! Yesterday I read an answer to one of my questions and thought, "tomorrow I'm going to ask what people cook with their left over turkey" and I couldn't remember that question today.

My mom used to make turkey gravy over mashed potatoes. I miss that. Of course I can make it but it will never be as good as my moms was.

Thanksgiving soup. Just make a broth from the turkey carcass and toss in all the leftovers. Simple & delicious too!

That's the beauty of not fixing turkey. No leftovers.

We're having salad, with tuna salad on the side.

Stepdaughter did give us leftovers of ham and green bean casserole, but they'll be eaten tomorrow night after bowling.

Creamy potato soup and a sandwich with summer sausage.Went out for turkey day so no leftovers.

I am so sick with a terrible cold so can't imagine actually cooking. I'll have some chicken noodle cup-o-soup and hot tea. Think I'll drive to the market and get some sherbert and more Cold medicine.
