Amsterdam Histories museum: http://www.amsterdam.info/museums/amsterdam_historical_museum/ used to be an orphanage, in the court there is a display about that time, (free) and in the museum itself is a lot about Amsterdam history, you can enter the museum courtyard from several points, easiest to find will be Kalverstraat 92.

Those that are in the old town, within the circle of canals, are almost all dating back to the period of the 17th century. If they are outside that circle, they might be older, as Amsterdam has been growing and glopped up some villages that are older than the town itself.
