This one is recommended, despite the bizarre title (it covers the whole of Scotland, not just the Moine Thrust). It's written by a geologist, but is not too technical. Check it out on Amazon:
Hutton's A*se: 3 Billion Years of Extraordinary Geology in Scotland's Northern Highlands (Paperback)
by M.H. Rider (Author).
Even better, if you happen to visit the north of Scotland, make a visit to the Knockan National Nature Reserve (near Ullapool), where the Moine Thrust is exposed, and was first recognized.
