I'm just sat here wondering what to do for dinner..that would be wonderful...can I bring the family please?
All the trimmings!

The night before, after it is defrosted season the roast pork and leave in refrigerator over night.
PREHEAT oven to 325degrees.

Mix salt, black pepper, thyme (fresh better) and clove of garlic & onions -cut up very small.

With a large knife, make holes in the meat by sticking the knife in and out (as if stabbing)about 2 inches apart..*Do not make holes through the thick skin.

After mixing the above seasoning together, place the seasoning mixture deep into the holes
you have made in the pork meat.Leave in refrigerator over night.

The next day cover and place in oven.
About 1 1/2 hrs for each pound( lb) of pork.
Uncover for the last 45minutes, so it can brown and the thick skin* becomes DELICIOUS pork crackling.

Peeled potatoes can be placed around the roast during the last hour.

Use the oil from the roast pork to make gravy with the pork flavor..simmer in a frying pan with left over oil from roast - onions,thyme, cut up tomatoes,garlic & little water. You can add a little Soya sauce or worcester sauce for coloring.

Very nice, i would, but i'm having a Roast Chicken, with Roast potatos Green Beans, Carrots, Gravy and some bread Sauce!

I have made a rather lovely trifle, that i can't wait to dive into in abou 1.5 hours!!

I will eat the apple sause because i don't really like the rest of it... sorry!!!

Angel thank you so much but just had roast lamb and mint sauce, potatoes, roasties, carrots, cauli and peas followed by apple crumble and custard.

sorry i am vegetarian... just some mash, yorkshire puds n boiled veg for me oh n loads of gravy yum yum
