Anyone can accurately claim that gods are impossible if they define god in such a way that it is so.
If you say that no god can possibly exist unless it appears before you, answers all your questions, and then creates a rock too heavy for it to lift, and also lifts it, then yes, you are probably going to live in a universe with no gods.
This is why atheists and theists talk past each other so much of the time. In using completely different definitions of words they end up talking about completely different things... often without even realizing it.

Atheists rarely claim that it's impossible God exists (although some do)
Most atheists completely disbelieve in a particular kind of God, such as the Christian God, the Buddhist God, etc-- a God the characteristics of which they have some apparent knowledge. Most people, even atheists, recognize it would be very difficult to disprove all possible gods.
However, remember that the default position in any argument, before any real quantifiable evidence presents itself-- should be doubt. And as you may know, this position has been applied to the existence of the universe itself-- but it seems there are good answers to this level of skepticism.

I'm not an Atheist, but in their defense...we haven't proven the existence of God either. Because I believe something exists doesn't mean it exists...anymore than NOT believing means it doesn't.
The universe is factual proof that the universe exists...nothing more...nothing less. Also, you say atheists HAVEN'T quantified the universe, yet claim there is no God...where, I might ask, is the hypocrisy in that?
I am agnostic...fire away...

Well Christians and all the other religions haven't managed to quantify the Universe yet claim it as fact that "their" God does exist ?

Why would I need to quantify the Universe to believe or not believe in God?

It was in fact the Franciscan William of Ockham who said there is no theological arugment for, nor scientific proof of, God's existence, and that to belief in God one must have nothing more or less than faith.
Don't blame that timeless truth on atheists.

Not necessarily hypocrisy. Universe is too large to quantify by our current technical knowledge. But that does not mean that a person HAS to believe in god.
Its a subjective matter. We believe and they don't. That's it.

we've only had science for a few hundred years. the planet is billions of years old. how can the universe be explained in that amount of time? we learn new things all the time. or do you just want us to say god did it and we're done? just like when people created god to explain what was going on without having to examine what actually happened. or do you still want the excuse of saying god wants us kill those people because we want their stuff. god is an unnatural concept.

Never claimed that. I believe the standard claim is God is unprovable, but very very unlikely.
We haven't disproved the Easter Bunny either.

Okay first work on your syntax.
Now I shall answer the question. Atheists do not claim as fact that there is no God, merely that the existence of a Deity is impossible. There is a difference even if you do not realize it.
