It tends to absorb the airborne (mostly organic) molecules which comprise the odor. You choose to have an apple that smells a lot like fish, instead of all the rest of your food that smells a little like fish. You'll probably throw away the apple.

Better yet, store your fish in airtight containers. Then you don't need to waste the apple.
