The A & M stand for Agricultural and Mechanical College. Texas A & M is a landgrant college. The federal governement set up land grants in each state to fund a college or colleges that would conduct research in agriculture and the mechanical arts. Virtually all states have landgrant universities. LSU is an A & M university even though they do not use that in their name.

Between 1876 and 1963, it was the Agricultural and Mechanical College of Texas.
In 1963, Texas renamed it to "Texas A&M University" to represent the expanded class offerings while retaining a link to the college's history. Which means that today, 'A&M' really doesn't stand for anything.
