Yes, in Jak 2, once you get the Jetboard you get to keep it for the entire game.

Oh yea, and just to mention one thing about the Jak and Daxter series of games, Jak 2 is the hardest game out of all 3 Jak and Daxter adventure game, so good luck to you. I don't know if you've played Jak 3 yet, but it's not as difficult as Jak 2.
