My bearded dragon recently dug a cave under a rock in her tank and spends most of her time there. Is this due to the temerature drop so shes in a hibernation like state. she does eat occasionally.

Mine did that too, as long as she's eating and her tank is up to temperature she should be fine.

I suppose it probably depends on where you live. I am in Illinois, and my bearded dragon has gone into hibernation/brumation. But when we lived in Phoenix our beardeds never went into hibernation. Right now, I have the lights still on so he can warm up if he wants, but am only offering greens every couple of days.
