Is it homeostasis? Sounds right, but I can't remember if homeostasis refers to open or closed system only, or both.

Homeostasis is usually used to describe how an organism maintains stability (i.e. the whole organism, not its individual cells). Like maintaining body tempurature and regulation of moisture, glucose regulation.

With the individual cells I would use the term Cellular Regulation. If you mean the stability of the cell in maintaining its structure, you could say that the Cytoskeleton maintains the "shape" of the cell.

homeostasis, think of it like a thermostat so you set it to a certain temp, if its hotter the ac comes on till it returns to the set temp.
