The above recipe sounds good. But mine is easier.
Get 3 dishes, like pie pans and put plain flour in one, a couple eggs (beaten) in one and a mixture of bread crumbs and parmesean cheese in the other (I usually use about 1/2 and 1/2, but you can use whatever combo you like). Coat chicken breasts in flour, then dip in egg to coat, then coat with bread crumbs/parmesean cheese mix.
Put the chicken on a cookie sheet and bake at about 375 for ABOUT 20 minutes. I use a digital thermometer with an alarm set at 140 degrees, so I don't time anything. Remove from oven, pour jarred marinara sauce (I like the chunky kind) over the chicken, then top with shredded mozzerella cheese. Return to oven until cheese melts (about 5 to 7 minutes). If you want the cheese to get a little crispy, you can put it under the broiler.
