They will be travelling in May and it is her 60th birthday so dad is wiling to splash out a little!

Does she like/know opera?
If not, when she has time before traveling, I would advise her to listen to some operas and operettas, go to a good music shop and ask them for advice, as for someone who does not know/like opera a lot of them are very heavy.

On the whole operettas are easier for the beginner listener, but as I do not know many and do not know what will be available, I can not give better advice.

In any case, if you want to know what will be on, tourist information office should be able to help her to get a list of performances on the date.
