Because Korea is a peninsula, the army's could create lines to fight from. In Vietnam, there was the Ho Chi Min Trail that ran down along the border, in Laos. Since we would not enter that area, there was no way to secure the line. It was forever changing. Also, there were many in South Vietnam who fought against the S. VN government. They were called the Viet Cong. It was very much a civil war, and without lines to defend, it was hopeless.

China was a country that had oppressed its own people in the pre Sino-Japanese war (leading into WWII. The Communists came along, and offered a better life for the peasants. So, after the occupation by Japan, and the oppression by the Nationalists, the Reds shoved Nationalists into Taiwan. Also, as the government, the Nationalists were not able to work like rebels.

Korea was a primarily a military opperation. Air power meant that the open country put ground troops at a disadvantage. The Chinese had plenty of troops, but in open country that is a disadvantage if your opponent has air superiority.

Vietnam was not so easy, since it was easy to conceal troop movements in the jungle. It was also a battle for hearts and minds. America tried to treat this as a war. In fact, it was political and the North was better at winning the hearts, minds and support of the southern populous than that Americans were.

Taiwan had an army, but again, this was an ideological battle that they were not able to counter. China, also has larger numbers.

However, it is not impossible to win against greater numbers, if you have a viable strategy. Hannible was able to beat the proverbial out of the Romans, since he was able to out think his opponent.

Israel is also a good example of small powerful vs big and clumsy.
