Should "Epic" be capatalized here? What if it was in a different spot of the sentence?

"Epic" should not be captalized because it is simply an adjective to describe a hero. An "Epic Hero" would also make little sense in a sentence, as it is really not a title of anything but a classification.

If epic were the first word in the sentence, it would be capitalized. But other than that, no - it isn't a name, nor a common noun, so it struggles along in lower case, as do all the other words in this sentence.
If you really want to read some strange examples of capitalization, find an old book or books that have copies of old letters in them. Something that is about 100 years old - and read it. In those days, people seemed to capitalize with no rhyme nor reason - just whenever they felt like it, or if they thought a word looked better with a capital letter to start off.
At least there are rules today, that make things much simpler for everyone.

Epic should not be capitalized because it is not an important noun like a person or place. It should also not be capitalized even if it was in a different spot of a sentence unless it is used as the first word in a sentence.

no, epic is only a noun, not a proper noun. For example, he was a king . King George, when it is part of a person's title , but not just as a noun

No, it would not be capitlized there. It would only be capitalized if it was the first word in the sentence.
