They turn their heads to better orient on the exact direction from which a sound is coming. Almost all animals have better hearing than we do, but sound waves can be distorted by bouncing off hills, rocks or other features of the landscape. By turning their heads, an animal can better locate exactly where a sound originates. We do the same thing. Note your own reaction the next time you hear a faint noise that you don't recognize and can't quite locate. You'll catch yourself turning your head to try to catch the sound better so as to pin point its location.

With 2 ears, animals like humans get a pretty good fix on where sound comes from. They then look to see if it denotes danger or to see if what they hear is approaching them. And react accordingly. When you can not tell where the noise is coming from you turn your head to try to get a better fix on the sound.

same reason we do. When we hear something it's because we are alerted by the sound./ So animals are constantly on the look out for predators and when they hear a noise they turn to see what caused it..duh.
