Get her something that she doesnt need but could use, because if she needs something she will want the best and the most expensive.
What i mean by something she doesnt need is something like: pj's or some kind (lasenza has cute ones around christmas time for exactly 20$) or a body shop basket (they come pre-made at the body shop for about 20$) or a christmas dvd (classic one like Elf). Another good idea would be a nice bag that she could carry to work or a box of nice christmas tree ornaments (tree ornaments can be affordable but can look very expensive, The Bay always has a wide selection of nice ornaments in boxes of 2 or more.)

OK I am serious on this one. My mom finds some awesome stuff at the dollar store. Funny eh?? Well, here are some other ideas:
1. Diamond earrings (sometimes fake ones can look real!)
2. A vase or perfume plate thing (I was just at TJ Max and they have a perfume plate thing that is really cool for 10.00)
3. Chocolate covered coffee beans or chocolate covered cherries. (I know you said you had the small gifts covered but I wanted to say this anyway!)
4. Get her a pin or something that says "Best principal"(????????She might like that????????)
5. A jewelry box (usually wealthy people like jewelry, if they are girls!)
6. an apple!!! lol
7. a car!
(Last two are just jokes......!)
Anything would be fine. On the last day of school, my mom would bake a bunch of banana bread and give one to EVERY teacher I had. She also gave one to the Principal.

She obviously doesn't need things. We all have more candles than we can possibly use and gift certificates are so impersonal.
A nice dated Christmas ornament is one of my favorite gifts to give or receive. Another favorite is candy from a quality candy store.

You could probably put together something really nice :) Like a little basket with whine in it. (Doesn't have to be expensive, there is plenty good cheap whine out there) You could also include a gift card for the movies or a restaurant. Decorate it and make it look really nice.

Does she like to read? How about a nice hardback novel...choose one of the New York Times bestsellers, which are clearly marked at any bookstore. (or just give her a gift certificate to Borders/Barnes n Noble).

I'd donate to my favorite charity - on her behalf. Why spend money on something she probably doesn't need, want, or even like when you can do something more useful and much more appreciated? Give her a wrapped box with a note (or card) inside letting her know the good deed 'she' just did.

Fire starters for camping.
They get used up so she may be out of them.
You could probably get them at a camping supply store.
You might find some better ideas there.
Camping World has a websight.
The book "Enrique's Journey", I am reading it and find it really interesting (hard to put down).
