i'm worried that if it produces carbon monoxide, my dog may be ill.

Some carbon monoxide is produced in any fire in small amounts but it is when oxygen is limited that it becomes dangerous otherwise burning gas produces CO2 not CO.
Do you have smoke alarms? Nearly all also are CO alarms. What happens if you leave your gas stove or oven on all day? Same as a gas log fireplace. If your dog is ill from CO you probably would have felt it too in just a few minutes. I have experienced this. Not pleasant.

If you have gas logs in a wood burning fireplace the installer is supposed to render the damper inoperable or remove it. That way no one can turn the gas fire on with the damper closed.

If you don't want to remove or lock the damper at least buy a CO alarm so you know if you are getting poisoned before it is too late.

Lots of smoke in the house and a dead dog. It's called a flue.

your lucky fido isnt dead or you passed out when you walked in and succumbed as well
