Santino makes me think of Project Runway. :)
I think it's a bold choice, and the only reason I'm not more enthusiastic about it is the lack of nicknames. Sonny is the only one that comes to mind, and it makes me think of Bono and Corleone. Still, I'm assuming you're looking for an Italian name, and Santino is more interesting than Antonio or Marco ... so provided you come up with a better short-form, it would be quite distinctive.
Katerina is lovely. I'd use it without reservation.

I like your girl name--every Katerina I know is very quiet, yet very independent. I do not like the boy name at all--sounds like either a pizza company or the Italian version of Satan...either way, I don't like it. Sorry!

Katerina is beautiful!! Stunning and gorgeous!! But I like Catalina better. But both are very classy and elegant names.
I'm not crazy about Santino. Maybe Antonio instead?

I like Katerina, but I really dislike Santito. Santito sounds like some kind of mexican chips.
