1) Never heard of this in a long professional career. Ask whoever instructed you to do this.
2)Removes calcium ions (which make water hard) as insoluble calcium carbonate
3) A blockage? I don't know your setup but that's all I can guess.

Mineral deposits along the inside of pipes or tubes could interfere with water flow.

Regarding the thermometer, some glass may shatter if going from room temperature to extreme temperatures (hot or cold.)
