I'm a double minority is correct because we know what you mean.
If you were part of a double minority we do not know what percent of the part. You might only be half of a double minority; in which case you would be a single minority and not a double minority at all.
I'm double minority is incorrect grammar.
I'm double minoritied is the correct term, as in I am double jointed.

I think "I am counted as a double minority" would be correct since it's an EEO-derived term.
