We have a lot of Thanksgiving stuffing left over that couldn't even fit in the turkey. I would like to know if there is any recipes/dishes I could make with leftover stuffing? Thanks.

How about a frittata?

Stuffing Frittata

Cooking spray
2 to 3 cups leftover stuffing
1 cup shredded Cheddar (regular or reduced-fat)
6 large eggs
2 large egg whites
3/4 cup milk
1/2 teaspoon mustard powder
1/4 teaspoon ground nutmeg
2 tablespoons grated Parmesan
Salt and pepper
1 tablespoon chopped fresh parsley leaves

Preheat broiler.
Coat an oven-proof nonstick skillet with cooking spray and place over medium heat. Put stuffing in the bottom of pan to warm and stir to break up a little. Sprinkle cheese over top.

In a medium bowl, whisk together eggs, egg whites, milk, mustard powder, and nutmeg. Pour mixture over stuffing and cheese to cover stuffing. Sprinkle Parmesan over top. Cook on stovetop over low heat for 5 to 7 minutes. Transfer to the broiler and broil for about 2 minutes, until egg is cooked through and cheese is golden and bubbly.

Sprinkle with salt, pepper, and fresh parsley. Serve with sliced tomatoes.

Dice up some cooked chicken, turkey, or even pork roast and put into a baking dish. Mix together 1 can (is using enough for an 8 inch baking dish. If using a 13x9x2, you'll need 2 cans) cream of chicken, celery, or mushroom soup, your choice and 1 cup of sour cream per can of soup used. Pour the soup/sour cream mixture over the meat, top with the stuffing, dot with butter and bake in preheated oven 350 for 35 to 45 minutes, till hot. Serve with gravy. It's a good leftover meal. Stuffing can also if baked already be frozen and used later on. It keeps well.

because dressing is my favorite thing and it,s seasonal ,I purposely have left over stuffing(dressing ) At thanksgiving I make 2-3Xs the dressing I need and saving out what I'm going to need for the meal , I portion it up and freeze to serve later on as a side dish with other meals ,like pork chops or pork roast or a nice baked chicken.
(this is uncooked stuffing / dressing) with cooked you can still freeze but thaw totally before re-heating and you may have to add more liquid to avoid dry out.

I do a dish where I flatten and tenderize venison or antelope steaks ,fold stuffing into them secure with a pick,dredge in flour and brown on all sides ,add 4 cups beef broth season to personal taste,cover and simmer for 20 min. remove from pan add water to bring liquid back up to 4 cups and thicken with a slurry made of corn starch and water.(im sure you could do the same with beef steak or turkey breast.)

I also have a friend that stuffs large red tomato's with leftover stuffing and bakes them.that's yummy

and once I saw a recipe for cabbage rolls with stuffing .that sounded weird so I never tried it.

Amber's Super Stuffing

INGREDIENTS
2 1/4 cups chicken stock
1/4 cup wild rice
4 tablespoons butter
2 cups fresh sliced mushrooms
2 cups diced celery
1 cup chopped onion
4 cups corn bread stuffing mix
1 tablespoon poultry seasoning

DIRECTIONS
In a medium sized saucepan combine the chicken stock and the wild rice. Bring to a boil then reduce heat and let simmer until rice is tender.
In a large skillet melt the butter. Add the mushrooms, celery and onion. Cook until the vegetables are soft.
In a large bowl mix the cornbread stuffing and poultry seasoning. Add the rice and the vegetables and mix well. Use to stuff turkey or bake on its own. More chicken stock can be added if stuffing is dry.

Make a stuffing, turkey, and cranberry sandwich.
I just warm up the stuffing, it does fine in the 'wave, and pour leftover gravy on it. Yum.

Make a Meatloaf!

My college daugther got the receipe I believe off Kraft Foods website. They offer tons of receipes and desserts and healthy options.

She used lean hamburger, Stove Top Stuffing (but yours will be great), onion, catsup and I can't remember what else? But it was absolutely delicious and had no greasy mess.

You can make patties out of it then have stuffing sandwiches :-) Might be good.

I just toss it honestly...it gets too soggy too fast and tastes yucky as a leftover IMO

make balls of it and deep fry it, roll it in corn meal and place in muffin tins and bake for 30 min at 400 degrees, or until brown and a little crusty to the touch. Mix with eggs and scramble for a real treat.
