I'm gonna say this and I already know that I'm gonna regret it.
The reason so many people are under the illusion that life is hard is because they are ignorant of far too many things. Many of them are impulsive, emotional, self-centered, and undisciplined or any combination thereof, so they blame Life.
There are a few people that genuinely have a difficult situation, but they are far in the minority.

Life was simple in the old days: you worked hard, maybe you got to eat. That is simplicity.
If things were easy, there would be not way for people to distinguish themselves; any one could do it. Things are hard, difficult so people have to exert themselves, to see who can adapt. Also, people do not appreciate what comes easily. Look at all the young people today. They don't have to chop would, carry water from the springs, hoe under the hot sun to cultivate their gardens or slop the hogs, milk the cows. They just don't appreciate how easy they have life.

Partly because humans are programmed to be critical
(and thus societies too- read K.R Popper);And some,
sometimes a lot of people,get intolerant of those younger
especially those who have not gone through the "change"-
from childhood,from adolescence,from "knowall";And
this "knowall"thing(individual worship)gets interesting,when,
as a mass printed and followed theory(im thinking particularly
of the recent so-called Theory-of-Everything),such teaching
if it can be called that leads to mistaken elitism,mistaken
selection of future teachers,and of course a harder life for
those"who dont understand".
For the latter there is help,of course;If only to know that such
(stifling and mistaken) theories are continually rediscovered(!); probably due in part to those ordinary and hardworking individuals who want to go somewhere "new" and in effect unique.

The people who say life is "simple" settled for what's easy.

Life isn't easy because we are all agenda driven. That alone does not complicate things. What complicates things is that our agendas are not the same. Often times we occupy space with others whose agenda actually oppose ours.
Okay, really it's more involved than that but I haven't had enough sleep to elaborate without confusing myself. :)

then happiness wouldn't have any meaning,
pain is a good thing when you allow it to build you
rather than ruin you,
when you reflect back all the most joyest moments of your memory there was struggle to get there or before
I agree with the answer above me,
God tests us and I believe that to the fullest.
I kind of agree with the second answer, some people demand little from this life,or they are just thankful nothing wrong with that though
