What's the nicest town to spend the night in while on a road trip from Sydney to Brisbane?

I would suggest Coffs Harbour, or anywhere near there. Possibly not Grafton, as I stayed there once and it wasn't as big or as scenic as Coffs Harbour.

Anywhere around Coffs Harbour on the coast.

Armidale if you take the New England Hwy.

Nambucca Heads is nice (better than Coffs Harbour), or Scotts head (a few km south of Nambucca Heads). Those were my usual break points.
