our foxtail keeps hiding behind the rocks and he begins to change from dark brown to pale yellow then he turns normal again. is it like camo or something?

Is this a foxface (marine fish)?

Many fish use color change as a form of "communication" to indicate their mood or breeding condition. This can be particularly obvious at night when most fish become more pale in color.

Chances are your fish may be doing something similar. If this is happening during the day, I'd watch to make sure there isn't another fish picking on him.

It is normal, and you are correct, it's like camouflage. Many marine fish do this, especially at night. You may really notice a darker coloration when the lights are first turned on.
