I have never seen a carrot cake that didn't have carrots. Maybe I am missing something.

Carrot cake is supposed to have carrots in it! If you buy one without carrots in it, just go right back into the shop and demand they put some in immediately. They will be so embarrassed that they will comply without hesitation.

For the cake:
175g (6oz) wholemeal self-raising flour
1 level tsp baking powder
1 level tsp ground mixed spice
Pinch of salt
150ml (1/4 pint) sunflower oil
175g (6oz) soft light brown sugar
3 medium eggs
100g (3 1/2oz) raisins
250g (8oz) carrots, peeled and grated
For the topping:
200g (7oz) cream cheese
Few drops vanilla extract
3-4 level tbsp icing sugar
Orange and green food colouring
It does have carrots in! x

For real I must be dumb I thought it was in the ingredients.LOL But at some places they makes a carrot out of icing on it so good enough for me. Not like im gonna eat it anyway I like lemon meringue.LOL
