Now, unless I am mistaken, the middle east is a long way away from Europe. So why can Isreal compete in the European competitions?

from 1974 Israel were not a member of any confederation, and competed in qualifying in Oceania, Africa and South America. With the increased importance of the FIFA World Rankings though, Israel realistically needed to throw their lot in with one confederation so that they could compete in a continental championship, so in 1991 Israeli clubs were admitted to European competition and 1994 they became a UEFA member.

Geographically it's not that far from Europe, actually it's very close.
The size of the United States of America stretches from England to furhter than the Middle East...think about that.

Israel and Jewish people have a VERY long history with Europe and is traditionally considered "West" rather than "East" .

Most middle eastern countries feel that Israel does not exist. Most European countries feel that Israel exists. Therefore Israel must play with the nations that recognize the existence of the state of Israel. It would be a sin if they had to play with themselves!

Because they had to go somewhere after the Arab and Muslim States had them kicked out of the AFC in the 70's.
UEFA granted them full membership in 1991.
