Well duh, do 3 rep deadlifts, squats, and leg presses

You know the "girly" machines such as leg curls and extensions? These target single muscles in your legs. Try then, you'll get a great workout

Well I would Start out at60% of your max and do 3sets of 12 and then progress by week 70% 3 sets of 10 and so on.
It helps if you add supplements to your work such as Gluthymine before your workout, Creatine and a protein shake after. I reccomend buying creatine pills from Puritains pride.com; be prepared to gain a little weight which will help you gain muscle mass.
Good Luck!!!
