Ehi, modesty aside, you are talking to the most sophisticated eater and cookery writer on the planet for your knowledge.

However for some reason I never liked sandwiches because they give me the impression of hasty eating. In fact that is why the sandwich was born because a certain lord Sandwich during a battle didn't have time to sit down to eat a proper meal and asked for some beef or pork to be put in between a couple of slices of bread.

In Italy we have the panino instead of sandwiches and the places where they are sold publicly are called paninoteche though traditionally the panino was a peasant's style home made food item that has turned trendy. The panino is any kind of home bread with anything that you like in it and the art of the panino is a great art indeed.

However because of my indifference to sandwiches I never perfected the art of creating new ones so I will keep to a nice sandwich of wild Scottish smoked salmon with some ground pepper in it. Though I wouldn't mind a guinea fowl or pheasant sandwich if there is such a thing because I like guinea fowl and pheasant.

If I had to make a sandwich with any of the many panino fillings it could be with Parma ham and artichokes hearts lightly roasted and preserved in olive oil.

Buon appetito!

I love BBQ shredded pork the way my husband makes it in the crock pot. It is so delicate, not a strong BBQ flavor, and lightly spiced put on grilled sourdough with garlic butter, cilantro and mozzarella until it melts. Wish I had some now!!! Yum!

Very hard to say. I eat alot of sandwiches. Anything with a pesto is a winner for me. Muffaletta gets me goin. Dry, hard meats (salami, prosciutto) are faves, too.

Lousy bread can ruin anything. I like harder, more robust breads. Not quite hard semolina, but close.

Hot pastrami with melted swiss topped with coleslaw on dark rye bread, thousand island dressing. Followed by a good chicken salad on wheat toast.
