Well I know in the US that is an urban legend. They do not have to tell you. If you think about it wouldn't that defeat the purpose of being under cover? Now if you get busted doing something, and you have a good enough lawyer, and it wasn't too serious of an offense, you might get off if they can prove its entrapment.
I don't know for sure about the UK laws, but I would be willing to be they are the same or similar.

They can lie, it's a matter of protection. If you are undercover around a bunch of unsavory fellows and they ask you if you are a cop, and you tell them yes, they might feel the urge to kill you, if they have already given away too much information.
