Alinea, in Chicago. This is kaiseki dining Western-style from chef Grant Achatz. In other words, multi-courses (choose from 12 or 24 courses, $135 and $195, respectively) of magnificent morsels that are cunningly (and sometimes whimsically) crafted, elegantly presented, and joyfully consumed in a setting that is so comfortable that it squeaks. Eating here is a commitment. Though it is expensive, and jackets are required for gentlemen, it is not snobby or pretentious. In fact, you can have a very good time. Just be prepared to spend several hours and quite a few dollars.

You have your choice of Per Se in New York City or French Laundry in Yountville, California. Both are owned by Thomas Keller and both have earned the Michelin Guide's Three Star rating. The food is French influenced American.

Reservations are two months in advanced and always waitlisted. Jackets are required for men and jeans, t-shirts, sneakers and shorts are not allowed.

The whitehouse restaurant in Anaheim, Mr. Stox is also very nice. I like Spago Bev Hills, and Chinois on main. I'd love to eat at ANY Gordon Ramsey restaurant!
