Since they are an invasive specie I just want to know if you can eat them, so we could control their population.

Some chinese eat the mongoose for medicinal reasons they believe. I'm not sure though, they might be infected or tainted somehow.

If it were okay to eat, I would see if it were good to put in chili, or mongoose and peas, mongoose burgers, mongoose stew.

It sounds good but I say the meat might be stringy since they run around a lot, I'll just have to see after I know it's safe first.

The obvious question here is, "Do you happen to have a mongoose that you're contemplating cooking?"

You probably can. The question, as you have already surmised, is "Would you want to?".
