The stuffing envelopes thing is a scam. You pay a fee for "training materials" or "materials"- your training materials then tell you place the same ad you found all over the net and newspapers.

There are very few assembly jobs and companies that will actually pay for your returned products. Many companies will send you your crafts to make and never approve the final products you turn in.

As for data entry, there are very few actual data entry jobs. The majority of them that are online are scams. A legitimate company will not ask you for a fee and will want you to have skills. There are some data entry companies listed in the link of my profile but will also warn you that they may not be hiring at this time. There are also many other jobs listed there that may interest you such as phone jobs, administrative, transcription, writing etc. Many of the jobs do not ask for a fee either and the jobs are free to view.

Can you sew? Making pet items is lucrative. I make my car payment each month by just doing cat toys in the evening, wholesaling them to two ladies who sell off their sites and who do cat shows occasionally.
